WWE doesn't actually do tryouts, but FCW and formerly OVW do conduct tryouts.  I can't speak for FCW, but OVW I can.  On the first day is sign-in, waivers, and the evaluators conduct camps.  These camps are basically to show what they are looking for and how they would like you to perform the moves, holds, spots or whatever.  They also conduct drills around these ideas they are trying to represent.

Day 2 those that are asked to come back for day two, they let the wrestlers conduct mock matches with each other.   These matches show the workers creativity, how to work with what they are given, and how well they work their character.  Sometimes OVW had a day 3 which was a dark show on OVW.
