i have to ask how much time ahead of time do they know what is going to happen like which say it is wrestle mania 27 will the wrestlers know what is going to happen at wrestlemania 28

That actually depends on alot of factors.  On the independent circuit, most of the time a couple of weeks is the maximum time, with the exceptions of major storylines.  With major storylines, it's a couple of months maximum.

With WWE, most angles (one person against another) are known about 3-4 months in advance.  The show are usually written about 30 days in advance with the time and room for error to change as needed (injuries, drug incidents, death).  Title changes usually are known from 4-8 months in advance, with few exceptions (injuries, drugs, death).  The person about to win is usually the first to know, based upon negotiations of contracts.
