Answer
How are you doing Dustyn?

Being a professional wrestling for 11 years, I can tell you that if you Epilepsy is under control with medication and your seizures are not severe and don't last long, there is nothing that can stop you from living your dream.

There are several good wrestling schools all across the US.  Finding one in your area where you live is as easy as a google search.  Now your trainers will most likely for insurance reasons require a certified note from your doctor that says he feels you are healthy enough for professional wrestling.  If your doctor hasn't cleared you, the biggest things he is going to be concerned with are falls on your back and shoulders, jarring strikes to the chest (clotheslines, chops and forearms), jarring strikes to the back (clubs and forearms), and top rope balance.

Once you find a school, start training and find out of your body can take it.  If your body can't take it, then there are other parts of wrestling that you might be able to do.  Referee, manager, storyline writer, ring announcer, or commentator are several other possible avenues.  You will never make it to WWE with Epilepsy as a on screen performer (wrestler, manager, or referee), but there are other things for WWE as well.  All require a college degree, but if you want to be involved in the business, don't let a hang-up stop you, get around it and conquer.

I hope this helps answer you questions.  Good Luck!
