AnswerHello Dustyn,
There are several schools that are considered among the best there is to offer. Keep in mind that no school, no matter how good it is, will suit everybody. The school that is best for you isn't necessarily what is generally considered the best, but these schools are good options to look at. This isn't a complete list of the best schools, but rather of a listing of several of these schools, including those considered the best of the best, to give a starting point.

Okay, as for the epilepsy, there are so many different ways in which epilepsy can manifest in someone that I cannot go through and specify, if you have this or this, it could be a problem. In any case, keep in mind that I am not a medical professional and thus I am limited only to suggesting in what cases a problem may arise, as far as pro wrestling goes.
Naturally, if your epilepsy can be managed by medicine, then you should have no problem. If your epilepsy is one of those where it is triggered by certain stimuli, it shouldn't cause a problem so long as to take steps to ensure that stimuli does not occur in your presence. If your seizure is a 'simple' one without any change to your consciousness- the effect of the seizure only being the feeling of an emotion, sensation, etc., then you should be okay.
Your only real problem is you have 'complex' seizures, where your ability to interact with your surroundings is affected. Foe example, take atonic seizures, where muscle tension is briefly lost. This is problematic in pro wrestling since if you happen to be executing certain wrestling moves when an attack occurs, the move can be botched and cause injury. It can also hinder your ability to protect yourself during wrestling moves.
So, basically, you have to ask yourself if your epilepsy can be managed and if it results in any kind of outward movement or impact to your consciousness that can result in botching a move. If the latter is that case and your condition cannot be managed, then and only then, does it appear to be a problem. It would depend on precisely what the effect or movement is.
If you complex seizures following simple ones, then even if your epilepsy results in say, loss of consciousness or movement of limbs, you should be fine since the simple seizure gives you warning- so your opponent can suddenly get the upper hand and put a rest hold or some other appropriate move on you until you recover, or so the match can end or you tag in a partner or whatever. This can still be a problem, however, if it occurs too frequently and so is too disruptive.
So, in all likelihood, you should be fine to wrestle, particularly if no problems have arisen thus far.
When in doubt, consult a certified medical professional.
