Answer
Well it's a good question, see most guys do get started in their 20s in wrestling. But, it's usually their early 20s. Now, I have no doubt you can do Indy shows and make a good living at them. In fact, some of the best Indy talents can make a lot of money. Bryan Danielson, known as Daniel Bryan in WWE, was one of the hottest Indy talents in the world, he made over $1,000 per show. Not bad cash, even in American currency.
Now, I will tell you this, Batista actually started late, about 30, as did MVP. Thing is with Batista, he was a body builder before he went in, and so he had the body the big leagues loved. However, he spent I don't know how many years in development. He didn't make a WWE appearance until his mid-30s. MVP had the same issue. He was actually in jail for a number of years, and while there he fell in love with wrestling. So, when he got out, he went into training. WWE liked what they saw, and gave him a try.
He mainly spent his time in the mid-cards, but he was still a WWE talent, and a normal sized guy.
My opinion is this, go for it, the worst that could happen, is that you'll have a nice Indy career if you're driven to do well. Listen to your trainers. I will say this, you'll need to move to Australia if you want to train, because there is no reputable wrestling school in New Zealand.
If you had the money for a big move though, some of the best schools are in Japan and the UK, especially the UK. Anyone who wants to wrestle tends to end up in those places anyway at some point and time. They are wrestling hotbeds, so they have a lot of schools.
Just let me know what you want to do, and I'll help any way I can
