It's a bit tough to help ya there as most of the best schools aren't in Montreal. There are some schools there, but the best are in Ontario and Alberta. Plus, it's more of a French area in Canada and not English mostly. Although they do speak English there, just not as dominate as French in Montreal. In any case, I'd recommend Ontario if you're making a Canadian wrestling trip.

One of the best schools right there is called "Can-Am Wrestling". It's in Ontario around Windsor. It's actually near the US/Canada border, which is great as you can travel across into the States to go to wrestling promotions just a few hundred miles away that are the big Indy places in America. Such as PWG and others.

Of course, over in Alberta you have the Storm Wrestling School, another great school in Canada around Montreal.
