If the saddle colors are constant and always the same from track to track, then why were the horses in the 8/6/2007 haskell invitational all wearing the same color schemed saddle towels?

Saddle towel colors are not necessarily the same from track to track. Each track handles the issue of saddle towels to their own satisfaction. Generally, however, they do correspond to the post position of the horse, with each color representing a different post position.
But regardless of how they handle saddle towel colors normally, most tracks use special saddle towels for major stakes races. These towels are often all the same color scheme, with the horse's name embroidered or printed on the saddle towel that he/she wears. often these are then given to the owner after the race as a sort of gift.
Sometimes for smaller stakes, the name is velcroed on, and then removed after the race, rather than given to the owner.
