Dennis, the best thing you could do would be to get a clubfitting so that your clubs can be properly fit for not only your height, but also your swing type. You might need softer or firmer shafts, or perhaps a more upright or flatter lie angle, for example, depending on the type of swing you have. And you might also need shorter shafts to fit your height (off-the-rack clubs are designed with a "standard" golfer of 5-foot-11 in mind).
Using women's clubs is fine in theory - but they won't improve your game if they aren't also fit to your swing. Those women's clubs may not have the proper flex for your swing, either, for example.
Getting a clubfitting is one of the best things any golfer can do as far as equipment goes. You can get more info about clubfitting - how to find a clubfitter, what the process is, how long it takes - at http://golf.about.com/cs/tipslessons/bb/bybclubfitting.htm.
Answer
Yes, cutting a shaft - or "trimming" as it is called - is certainly an option. Just keep in mind that when a shaft is trimmed, it also has the effect of increasing the stiffness of the shaft. If you have regular flex shafts, for example, they might feel after trimming like stiff flex shafts.
