Hi Steven.  You're question has several possible answers.  If you are asking for the name of the fly one would tie to the end of the line and fish with...there are many flies tied to imitate long wing bugs.  Two of the most popular used to fish for Salmon are the Jock Scott and the McIntyre.  If you are asking what the name of the actual insect is there are a number of insects know as Salmonflies or Stone Flies.  These insects come from the genus Pteronarcys.  I hope this helps.
