I have tried all of these methods and have found that setting the hook on the tap tap I usually come up with nothing. Either I am too slow or too fast, probably the former. The counting method has not worked any better for me so what I do is simple very gently feel until the fish swims away with the worm. This has been the best method for me and I do not miss too many except in very cold water. Maybe I should strike immediately in cold water. I think I will give it a try next winter.
I do not "cross the fish's eyes" as some call for. I use very sharp hooks and when I feel the fish swim away I use a firm wrist snap to set the hook. BTW if a fish takes the worm and swims away fast rather than leisurely that often means there are several other fish in the area and yours is trying to get away from the others to keep them from stealing his catch. Make sure you fish the area thouraly. You may have found a honey hole with your first fish being the smallest.
