why do the fish i catch, mostly trout and bass seem to always swallow the hook? am i using the wrong size? this makes it quite difficult with removal.
what is the best way to catch trout in a stream, on a cold rainy evening and what is the best bait?

The reasons they swallow the hook can be more than one thing. Trout and bass as well tend to swallow the hook because they usually just suck their food in rather than biting it. Also if you are setting the hook kind of late they may swallow it. It could also be that for some reason or other the fish are very excited in the situation and just suck in the bait.
On hook size there is some give and take. A bigger hook will improve the chances that the fish willl no swallow it. On the other hand if you use a hook that is too big you will catch less fish.
On catching stream trout try baits like these:
Worm (they can be trolled too and don't be afraid to use a whole one).
Trolling a fly.
If it is windy enough to cause small waven then putting some worm on a jig or curly tail grub with a bobber can be killer.
Spoons and spinners can be grea too.
Also use good quality line (not the cheapest stuff) that is the lowest test possible. I would say around 4# test is great. 2# test of very high quality line would be even better. Always use a leader as well (wether you are bottom fishing or not).
Fishing the hours around dusk and dawn tend to be best.
