QuestionI am new to volleyball coaching and have a question about substituting. How many players from the bench can you substitute for a starting player if I would not use the libero? If I substitute a hitter for a starting backrow player when she comes to the front can I substitute a different hitter for her when she comes back to the front the second time.

The rule that you're describing hasn't changed at all since I've been coaching.
You may put in as many people as you want into one spot. So, let's say you begin the match with Starter in the front row. You can put in Sub 1 in to serve. Then put in Sub 2 to play back row. You can then put Starter back in, Sub 1 back in or Sub 3. No problem.
What we have to remember is that, all girls that you put in for Starter can now only play in the spot. If you forget and put in Sub 1, 2 or 3 into a different spot, you'll get penalized for an illegal substitution. I did that 3 years ago. My assistant said, "Aidan has already in for someone else." I was like, "That's right!" The team held their breath, while the scorekeeper never noticed. Shew! So we got lucky.
