Instructions:

1. Prepare the jars and lids. Wash the jars and lids in hot soapy water and rinse them thoroughly. Place the jars and lids in a large pot filled with boiling water. Boil them for 10 minutes to sterilize them.

2. Prepare the food. Follow the recipe you are using to prepare the food. Some foods may need to be blanched before canning.

3. Fill the jars. Ladle the hot food into the jars, leaving 1 inch of headspace at the top. If the recipe calls for sugar, salt, or vinegar, add them now.

4. Wipe the rims of the jars. Wipe the rims of the jars with a clean, damp cloth to remove any food residue. This will help to ensure a good seal.

5. Put the lids on the jars. Place the lids on the jars and screw them down tightly.

6. Process the jars. Place the jars in the canner or pot with a lid. Add enough water to cover the jars by 2 inches. Bring the water to a boil and process the jars for the time specified in the recipe.

7. Remove the jars from the canner. After the processing time is complete, carefully remove the jars from the canner using the jar lifter. Place the jars on a wire rack to cool.

8. Let the jars cool. Allow the jars to cool for at least 24 hours before testing the seals.

Testing the seals:

To test the seals on the jars, gently press the center of the lid. If the lid pops up or flexes, the seal is not good and the jar should be refrigerated and consumed within a few days. If the lid stays down, the seal is good and the jar can be stored in a cool, dark place for up to 1 year.
